Most Americans don't realize that the vast majority of what we consume in the US isn't actually a True Cinnamon. Rather, our industry here uses Cassia, which is a relative - but not a True Cinnamon - and Cassia is infinitely cheaper. True Cinnamon commands a much higher price - with Vietnamese and Sri Lankan commanding premium prices with much smaller market availability. Vietnamese Cinnamon is often in high demand in the pharmaceutical Chinese Medicine industry - whereas Sri Lankan Cinnamon is the ultimate culinary Cinnamon.
Cinnamon Bark is fresh and diffusive with a dry, almost fruity nose and tenacious warm spicy drydown. It displays an aroma that is very close to the freshly ground cinnamon bark.
Cinnamon is known as the "Titan of the Spice Trade", as it smells and tastes great, and is highly versatile as a flavor and perfumery material. Used widely from confections to Thai, Indian, Middle Eastern, and Mexican cuisine - many foods and desserts around the world simply wouldn't exist without Cinnamon.
According to multiple studies, Cinnamon Bark is effective against 98% of all pathogens and it is anti-parasitic. Can be used in effective oral hygiene with proper dilution. Great in a diffuser to help clean the air of pathogens, and is a great warming and uplifting oil.
