Now this is a real gem ... one that I’ve shelved and has been awaiting the right time to emerge. Distilled in 2019, perfectly incense’y like those first moments of a Jiribam chip on charcoal. This oil is a real delight!
Jiribam Incenze is an unfermented traditional copper Deg and Bapka, wood fire-distilled oil - and it is oh-so pleasant on the nose!
THE SCENT
A lot of folks have somehow been scared off traditionally distilled Deg and Bapka oils, or Hindi’s in general, as I think folks fear any potential offputting notes.
The good news is - not all Hindis are fermented, and even when they are, they can have a depth and character that most other oils simply won’t have. Especially with years of age on them, in much the same way that wines will mellow with age.
One of the character strengths of traditional oils cooked meticulously over wood fires is that there is a variable temp from the wood (as opposed to steady, consistent heat from gas). Anyone who cooks understands how wood-fire cooked foods have a depth and complexity of flavor that is unmatched by other methods. The same can be said of any well-made traditional oil ... the key here being properly made!
The scent on this is just gorgeous, and if you’ve been following my work, you know I break down Incense notes into 2 categories :
1. Incense Character - which can include anything that smells incenses’y or resinous, but not necessarily smokey.
2. Smoke - like incense smoke from a Japanese-style Senkoh stick, or smoke from a chip on charcoal or a Subitism.
I love both categories, but I personally really love Incense Smoke in oils - and Jiribam Incenze is rich in those sweetly Smokey first moments of a chip on charcoal 🥰🫶🏼
If you're a whiskey lover, we'd call this a light to medium peated, with sweet wood notes and hints of fruit and flowers, layered over rich resin and incense woods.
If you love the scent of rich, resin dense wood on charcoal - you will absolutely LOVE Jiribam Incenze.
Some tropical florals and fruits peek out through the smoke and resin - but the overall character will leave you wafting through high grade Manipuri smoke and resin 🥰🎉
